Best served with friends over lunch. If you have a few folks coming around for potluck, throw 10 serves of this in a jug and top your guests as needed. This drink doesn’t discriminate though, if some of your guests prefer a nip of gin in the bottom, that’s definitely an option for this one. Keep your ice fresh each time for the best results.
Etota Ruby No Alcohol

30ml Ruby Grapefruit Juice

A non-alc. adaptation of the classic Ruby cocktail. This one requires a little preparation but is well worth it. Dust off the old cocktail shakers and try this one out as a treat. Be sure to give it a good “dry shake” to fluff it up before adding ice to your shaker. If eggs aren’t your thing, get yourself a can of chickpeas and strain off the water in the can. This works as a vegan substitute and still provides a silky soft texture.
Etota Spritz No Alcohol

Simple and delicious. Pour Etota into a short glass, fill with ice and top with soda. Cut a wedge of ruby grapefruit and squeeze the juice into the glass. Drop your grapefruit wedge in and grab a sprig of rosemary about the length of the glass, squeeze and twist it in your finger to release the aromatic oils and push it down into the ice.
Etota Grapefruit Spritz No Alcohol

Our adaptation of the classic “Spritz” cocktail. Add all ingredients into a wine glass filled with ice, skewer a plump green olive into a wedge of ruby grapefruit, and grab a sprig of rosemary about the length of the glass, squeeze and twist it in your finger to release the aromatic oils and push it down into the ice.
Etota Americano No Alcohol

2 Teaspoon Sugar/Agave or alternative
2 Dash Angostura Bitters
This one is really easy and is bittersweet, lightly effervescent and refreshing. Pour Etota into a tall glass without ice, add Angostura bitters, sugar and give it a stir. Fill the glass with ice and top with soda to serve with a slice of orange.
Etota Ruby No Alcohol

30ml Ruby Grapefruit Juice
10ml Aquafaba/Egg Whites/Wonder Foam
A non-alc. adaptation of the classic Ruby Cocktail. Dust off the old cocktail shakers or find an empty and clean jam jar with a lid, and try this one out for a treat. Add all ingredients to your shaker/jam jar and give it a good “dry shake” without ice to fluff it up. If eggs aren’t your thing, get yourself a can of chickpeas and strain off the water in the can for Aquafaba. This works for a vegan substitute and still provides a silky soft texture. Wonderfoam can be purchased online from many stores too and is a great alternative to egg whites or Aquafaba. Fill your shaker with ice and shake again vigorously, then strain through a tea strainer into a short glass filled with ice. Finish off by grabbing a peeler and slicing off a long piece of ruby grapefruit skin. Give it a quick twist over the top of the glass, to release the aromatic oils, and enjoy.
Etota Garibaldi No Alcohol

120ml Fresh Orange Juice
2 Teaspoon Sugar/Agave or alternative
A non-acl adaptation of the classic Garibaldi Cocktail. A fabulous brunch cocktail that is light and fluffy. Squeeze orange juice or get some freshly squeezed from your local grocer. Then blend the orange juice and sugar together without ice at high speed to make it “fluffy”. Pour Etota and half the orange juice into a tall glass filled halfway with ice. Give it a stir, top with ice and pour in the remaining fluffy orange juice. Garnish with an orange wedge resting on top.
Etota Digestivo No Alcohol

20ml Cold Brew Coffee (if it’s espresso add ½ teaspoon sugar to counter the extra bitterness)

Etota Ice Tea No Alcohol

2 Teaspoons Sugar
6 Mint Leaves slightly bruised between your fingers
This is ideal for those hot summer days. Add all ingredients into a tall glass and give it a stir, top with ice and circular slices of lemon, placed down the side of the glass. Finish off with a sprig of mint. Or twist this one up into a beautifully effervescent “Spritz” if you have a soda stream at home. Add all the wet ingredients into your soda bottle and chuck it in the fridge for a few hours to cool*. Once cold, charge it in your soda stream and add your mint to a wine glass, top with ice and add your newly created “Spritz” to the glass.
*By cooling the mix down, you allow more carbon dioxide to dissolve into the cold liquid to create the perfectly carbonated drink.
Etota Sober Zombie No Alcohol

We’re going Tiki here - this a riff on the classic Zombie cocktail created by Don Beach in 1934. Floating around in the afternoon sun, sipping one of these is a form of self-love. This tropical weekend banger works well for group serves or individuals. Blend all the ingredients with a cup of ice, serve in a tall glass with a skewered cherry, triangle of pineapple and go a bit fancy with a cocktail umbrella.

Add all ingredients to a cocktail shaker or Jam Jam with lid, add ice and give it a good hard shake. Fill a short glass with ice and strain the drink through a tea strainer. Finish with a quick grating of nutmeg for an indulgent winter touch.
Etota Irish Coffee No Alcohol

30ml Espresso
100ml Boiling Water
¼ Teaspoon Vanilla Essence
15ml Date Syrup
60ml Heavy Cream
This is a great winter warmer to enjoy after dinner. Add all the ingredients but the cream, into a mug. Give your cream a quick stir and pour it gently over the top of the hot drink. Add grated nutmeg to the top of the drink to finish it off and to create your version of a classic Irish Coffee.

1 Slice of Ginger
3 Cloves
1 Wedge Lemon
A twist on the classic Hot Toddy Cocktail. Add all ingredients to a mug and give it a quick stir. Stud the lemon with cloves and add it to the mug. Enjoy a deeply rejuvenating little number.
